The aim of this section is to show that To-Go Limited understands and complies with the requirements of hazard analysis. This section is based on Assured Safe Catering (ASC), a system developed to ensure the production of safe food and drink.
This section shows and verifies the effectiveness and comprehensiveness of their existing controls and systems or by those lacking formal controls to identify and implement a complete system. The process involves examining the operations step by step from the selection of ingredients right through to the service of food to the customer. Each step is analysed to identify any operation or activity which may affect the safety of food. Areas which are coved in the To-Go haccap booklet are as follows:
